Our wedding dinner for two, a romantic evening dinner in an intimate setting to celebrate our new lives together, was held at the Four Seasons Resort Maui at Wailea at 7:00pm.  Our exclusive server, Josh, escorted us to a breathtaking ocean-front location overlooking Wailea Beach, where we savored a leisurely paced multi-course dinner customized for us by their award-winning chefs in a private consultation.  This exquisite dining experience was accompanied with our choice craft cocktails and specialty beers paired by a sommelier/expert mixologist.  The location was a private elevated tropical hideaway carved into the gently sloping cliff that descends to the beach.  Our secluded table was adorned with fresh flowers and offered the most amazing view. We had met with Chef Hyrin Salaguinto the day before to talk about our likes, dislikes, favorite foods, flavors, allergies . . . the whole nine yards. She took notes and created a special meal, just for us.  We did not know what Chef Hyrin would be making for us until we arrived at our table. When we opened our menus we were thrilled with her selections. She had created a perfect menu for us.  For our first course, we enjoyed a sea salt roasted beet salad that included goat cheese, Haiku cherry tomatoes, arugula, macadamia nuts, and a balsamic reduction.  Next, we had a seafood sampler that included pan seared scallops (Wayne’s favorite), Keahole lobster tail, shrimp, Kula corn puree, grilled Maui pineapple, carrot coulis and chorizo crumbles.  Chef Hyrin’s presentation was exquisite and the flavors worked so well together.  In between courses, we watched the sunset. We really were in paradise.  Next, we were served lamb ragout tortellini with green lentils, natural jus, and parmesan fondue.  The flavors of this dish were amazing!  Next, to cleanse our palates, we each enjoyed a dish of mango sorbet.  Chef Hyrin did not miss a detail.  For the main dish, Chef Hyrin made a surf and turf combo that included a grilled dry aged filet/rib eye along with Hawaiian snapper (Onaga), roasted vegetables, rosemary potatoes, and a truffle pot demi sauce.  We were so full, but there is always room for dessert.  For dessert, we enjoyed a scrumptious cheesecake. It was divine!  To top it off, we also enjoyed our customized wedding cake designed and prepared by an in-house pastry chef from the Four Seasons.  After we finished eating, we listened to the sound of the waves and gazed at the stars. This was the BEST meal we have ever had. The food, service, and setting were all perfection.  Chef Hyrin even stopped by our table before we left and we were so glad so we could thank her for our outstanding meal.  She really picked the perfect menu for us. Everything was delicious!  When we got back to our room, the Four Seasons staff has delivered a signed personalized menu from Chef Hyrin, a photograph of us at our table, as well as chocolates and champagne.  The Four Seasons never misses a thing!
